Our Production

FANTONE is a hotel and a farm which is situated on a domain of about 370 Ha in a hilly countryside at the height of 300 – 450 m above sea level.
At the farm we grow organic cereals, oats, barley, corn, vegetables, fruits, grapes and olive trees. We also grow our own sheep, goats, pigs and fowls for eggs and meet production.
Beneficial location of FANTONE as well as its specific climate conditions allow us to produce biologically pure products! We don’t use fertilizers and herbicides. To feed animals we use only Bio feed.
To produce famous Tuscan sausage SALAMI we use herbs which grow in Fantone, natural casing is another peculiarity.

PORK NECK

To produce this product we use pork neck, the part which ideally combines fat and tender meat. For production we use only sea salt, white grape vinegar, garlic, rosemary, black pepper and red pepper.

FINE GROUND PORK SAUSAGE

This sausage is produced from the best pork parts with addition of pork lard. The meat is ground several times then we add salt, pepper, garlic and herbs. We use only natural casing.

WILD BOAR SAUSAGE

This sausage is produced from wild boar fillet (lean meat) with addition of a small amount of best pork (bacon), rosemary, pepper, salt, garlic, saffron, cloves, wine and nutmeg. As for spices, we try to follow general traditions of our region but we also vary them variously.

THIN WILD GOAT SAUSAGE

This type of sausage has always been used in Italy on special occasions. To produce this sausage we use wild goat meat (shoulder) with addition of high-quality pork (abdominal part). Spices that we add are especially important, these are juniper, mountain herbs, rosemary, saffron, cinnamon, cloves, white dry wine, garlic, salt and pepper.

WILD BOAR SPECIAL SAUSAGE

To produce this sausage we use only meat of a wild boar (the juiciest and softest parts) without pork. Wild boars that are used for production are grown in Tuscany and are all female.

BOAR AND PORK SAUSAGE 50&50

For production of this sausage we use special boar meat and pork fillet together with different spices (rosemary, cinnamon, garlic, pepper, juniper, coriander and salt.

TUSCAN PORK 100%

This sausage is produced from the meat of CINTA SINESE pigs which are grown naturally. For production we use only back pork parts and bacon with addition of various herbs such as wild fennel, garlic, black pepper, bay leaf and salt. Tuscan sausage can be met in every Tuscan restaurant but its taste varies depending on the region.

PROSCIUTTO

This famous Italian ham as well as salami is produced differently in different Italian regions. In FANTONE we use the technique which is typical for Maremma region so we use only back pork haunch, salt and pepper.

BOAR AND GOAT PROSCIUTTO

A lot of wild animals can be found in Fantone which allows us to produce specific products such as boar and goat prosciutto which is made with addition of red dry wine Morellino di Scansano and a vast amount of salt.

PORK CHEEK AND BACON

Pork cheek and bacon is something that everyone likes. We can hardly imagine famous Italian dishes such as pasta Carbonara or bruschetta without pork cheek and bacon.

JAMS

Our fruit grove has 125 different trees which give us apples, pears, peaches, apricots, prunes, persimmons, pomegranates, nuts, figs, sweet cherries, cherries and so on. Moreover, we have trees which grow in FANTONE wildly. They are fig trees, walnut trees, pomegranate trees and feijoa trees and dogberry trees. Such diversity allows us to produce wonderful jams according to Maremma traditional recipes, but at the same time we make our own experiments trying to find new delicious tastes. To grow our fruit grove we use only natural fertilizers. And while preparing our jams we use only sugar and different fruits without various additives.

OLIVE OIL

Maremma region where Fantone is located is considered to be the region of olive oil and wine. Our olive grove has about 500 trees, some of them are over 300 years old. To produce the best oil Extravergine di Oliva we collect olives in winter to achieve its maturation
